Public Old Town is a coastal Croatian bistro located inside the walls of Dubrovnik Old Town.
Opened in April 2026, it builds on the foundation of Public Pub Dubrovnik, first opened in October 2024, with the same mindset carried into a new setting.
Here, the focus is simple.
Fresh local ingredients, seasonal products, and dishes that highlight the flavors of the Dalmatian coast.
Led by chef Ivo, the kitchen works with a clear approach. Start with what is in season, then build each plate with balance, texture, and precision. Not to overcomplicate, but to bring out what is already there.
The space follows the same idea.
Stone walls, warm light, and a relaxed atmosphere shaped by the rhythm of the Old Town.
